This recipe for Taqueria-Style Carne Asada Tacos is great for a fiesta at home and has real Mexican flavors. Flan or skirt steak that has been marinated is grilled until it's done, then it's served on warm corn tortillas with fresh toppings.
Ingredients: 1.5 pounds flank or skirt steak. 1/4 cup orange juice. 1/4 cup lime juice. 3 cloves garlic, minced. 1/2 teaspoon cumin. 1/2 teaspoon chili powder. 1/2 teaspoon paprika. Salt and pepper to taste. 1/4 cup fresh cilantro, chopped. 1/4 cup red onion, finely diced. 8 small corn tortillas. Salsa, guacamole, and lime wedges for serving.
Instructions: To make the marinade, put orange juice, lime juice, garlic that has been minced, cumin, chili powder, paprika, salt, and pepper in a bowl. Put the steak in a shallow dish or a plastic bag that can be closed again, and pour the marinade over it. Close the bag or cover the dish, and put it in the fridge for at least an hour. For the best results, leave it there overnight. Set your grill's grates on high heat and oil them so that food doesn't stick. Take the steak out of the marinade and grill it for 4 to 5 minutes on each side for medium-rare, or until it's done the way you like it. After taking the steak off the grill, let it rest for a few minutes. Then, cut it across the grain into thin slices.
