Hmm! Difficult question since I don't really play games that have NPCs. I watch playthroughs but I like the monsters/bosses/eldritch abominations the most from the non-playable-characters and I think they don't count as NPCs?
I like Finlay from Still Wakes the Deep and the Traveling Merchant from Dredge. And I like the lady with the witch hat from Choo Choo Charles.

The first time Finlay was told I love you he laughed and told the girl her acting was over the top and cheesy. He regrets that now years later but at the time it had been someone he'd went to school with and acted opposite against for years. She was quite a good friend and he'd never once seen her as anything but. The two had been practicing monologues for auditions and she had stopped and grabbed his hand and recited Buttercup's confession from The Princess Bride. She'd swapped the name Wesley for Finlay and he'd told her that it was a bold choice making it more personal. When she ran off crying he thought she was upset with his critics. It wasn't until days later when she told him the confession was real that he knew what had happened and turned her down again albeit more gently.

I actually got into it around middle school, maybe high school. I was a casual listener then and was not as into it as I am now; plus, all the groups I liked stopped making music (block b, 2ne1, and 4minute). I stopped listening to it for a while and got back into it this past summer

I only went through and two and I have to say I enjoy "do it" a lot more concept wise but "karma" is still special bc it was the first.
