Give up grains and savor a nutritious, Whole30-compliant lettuce wrap stuffed with succulent ground beef and crisp veggies. In addition to being delicious, these Paleo lettuce wraps are a fantastic low-carb and gluten-free option for a filling supper.
Ingredients: 1 pound ground beef or turkey. 1 onion, finely chopped. 2 cloves garlic, minced. 1 bell pepper, diced. 1 zucchini, diced. 1 carrot, grated. 1 teaspoon ground cumin. 1 teaspoon paprika. 1/2 teaspoon chili powder. Salt and pepper to taste. 1 head of iceberg lettuce, leaves separated and washed. 1 avocado, sliced. Salsa or hot sauce for serving.
Instructions: In a large skillet over medium-high heat, brown the ground meat until fully cooked. Drain any excess fat if needed. Add the chopped onion and minced garlic to the skillet with the cooked meat. Saut for 2-3 minutes until onions are translucent. Stir in the diced bell pepper, zucchini, and grated carrot. Cook for another 5-7 minutes until the vegetables are tender. Season the mixture with ground cumin, paprika, chili powder, salt, and pepper. Stir well to combine and cook for an additional 2 minutes. To assemble, take a large iceberg lettuce leaf and spoon a generous portion of the cooked meat and vegetable mixture onto it. Top with sliced avocado and your choice of salsa or hot sauce. Fold the lettuce leaf around the filling to create a lettuce wrap. Secure with a toothpick if needed. Repeat with the remaining lettuce leaves and filling.
