A flavorful and zesty dip made with black beans, ideal for gatherings and parties. A hint of fiesta flair combined with deliciously satisfying black bean, cheese, and spicy jalapeos makes for a dip that is truly satisfying.
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1 cup shredded cheddar cheese. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup chopped fresh cilantro. 1/4 cup sliced black olives. 1/4 cup pickled jalapeos, chopped. 1/2 cup sour cream. 1/4 cup mayonnaise. 1 teaspoon ground cumin. 1 teaspoon chili powder. Salt and pepper to taste.
Instructions: Preheat the oven to 350F 175C. In a medium-sized mixing bowl, mash the black beans with a fork or potato masher. Add the shredded cheddar cheese, diced tomatoes, diced red onion, chopped cilantro, sliced black olives, and pickled jalapeos to the mashed black beans. Mix well. In a separate bowl, combine the sour cream, mayonnaise, ground cumin, chili powder, salt, and pepper. Stir until well blended. Add the sour cream mixture to the black bean mixture and mix until all ingredients are evenly combined. Transfer the mixture to a baking dish and spread it evenly. Bake in the preheated oven for 20-25 minutes or until the dip is hot and bubbly. Remove from the oven and let it cool slightly before serving. Garnish with additional cilantro and jalapeo slices if desired. Serve the Hot Black Bean Fiesta Dip with tortilla chips or vegetable sticks.
