Roasted Aubergine Fatteh

Spicy Jackfruit Fatteh (Healthy Middle Eastern Nachos)

This is a subtly textured, richly flavoured arrangement of toasted pieces of flatbread topped with meaty aubergine and beef, a garlicky tahini-yogurt sauce, red pepper flakes, pomegranate seeds, toasted pine nuts and fresh shredded mint.

Vegan Fattet Batinjan (Eggplant Fatteh)

Result: Failure. My companion didn't actually eat any of the fatteh, but that is no excuse. I'll just have to try again.

It happens when one of those words you used to lovingly overuse arises, Or when I'm sitting in an airport and see a certain ad, When I run into old mutuals from your side, unkind surprises, Or see the kind of dog I'm aware you had, It happens when I stumble upon someone "hiding" by pressing their face against something or someone else, so their eyes show, and you can tell only by their cheeks that their smiling And though I'm aware that you and I will never see the same way, And though I know it is far to late to ever ask you to let this heal, Despite all my efforts, I think I'm becoming more like you every day. Despite the way you controlled me, threatened yourself to threaten me, I cannot help but feel That I Am becoming you. I find I do the things I see you doing most vividly, And hear in my head the little voice of what you'd say in every situation And though I want it gone it remains An inescapable monument to all my sins A thousand unspoken apologies For the times my patience wore thin When in reality I should've been asking you for more of yours. Perhaps they call it closure because it closes the memories behind mental doors But I feel I never had a chance to say goodbye and so I still haven't left And I fear that if shocked sufficiently, Like a heart once broken and shuddered to a halt, if resuscitated I would simply slide back into those old, unhappy motions and call myself lucky. A man with no hope of swimming another foot will cling even to the sharks for support, I suppose.
