Okay so I really hate playing minecraft alone, and I also really hate playing on anything other than peaceful mode. I solve this problem by playing pretty much exclusively on servers, or lately, on one of my friends realms. (Realms are basically tiny servers.)
Minecraft is really boring until you figure out what you want to do. I like building and cooperating and organizing, which lends well to the fact that friends of mine will go into the strip mines I set up and let me deal with the farms and the animals and machines and help with everything else that doesn't involve going into mob infested areas any more than I have to.
I have to recommend servers, but you're hard-pressed to find ones that don't have some form of PVP in them. (Believe me, I've tried.) The good thing is that a lot of them end up only having PVP in specific areas, it's just a little trial and error finding them.
If you're not interested in servers, there's a lot of puzzle maps that you can download and play as long as you know how to work the blocks involved in them. There's also adventure maps with a similar idea, but they typically have some sort of storyline to go with them.
There's never anything wrong with switching between peaceful and easy as required if you want to play to win the game. There's also nothing wrong with hopping into creative mode and playing only to do builds.
If you're looking for an extra challenge or a different goal, there's plenty of mods, one of the most famous being the Tekkit/Technic pack.
One of the great things about Minecraft is that there's not that many restrictions at the end of the day -- you can do damn well anything with the right mods and settings.
