This is exactly how you make it shown in a video by the most talented @fresheather I'd omit the melted chocolate though. Repost @fresheathervideos γ»γ»γ» Healthy Homemade Chocolate Truffles π« #vegan You will need: - 1 1/2 cups pitted dates - 1/3 cup hazelnuts (almonds, walnuts or pecans will also work well) - 2 tbsp peanut butter (or any nut butter) - 2 tbsp cacao powder - shredded coconut, cacao powder and/ or melted vegan chocolate to top 1. Soak dates in boiling water for 5 - 10 minutes. Drain, keeping 2tbsp of the water. 2. Meanwhile, pulse the hazelnuts in a food processor. 3. Add in the remaining ingredients (including the 2tbsp water) and pulse until it is combined and clumps together. 4. Refrigerate for around 15 minutes then 1tsp at a time, roll the mixture into balls. 5. To coat, roll in cacao/ cocoa powder, shredded coconut or melted dark chocolate (if the latter, it is better to freeze the truffles for 30 minutes beforehand) or do a mixture of all three!
