Stir the soup using a ladle as you slowly stir. As you pour the cornstarch slurry in, continue to swirl until it is thoroughly combined.
When you carefully swirl the soup, pour a thin stream of egg into the center of the whirlpool. You achieve the lovely egg drop look in this way.
Whether hot or cool, serve. Pour the soup into bowls and, if desired, top with chopped cilantro and scallions.
