Make tasty Lego brick cookies that are ideal for parties and creative treats. These bright cookies are sure to please Lego fans of all ages!
Ingredients: 2 1/2 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon salt. 1 cup unsalted butter, softened. 1 1/2 cups granulated sugar. 1 large egg. 2 teaspoons vanilla extract. Food coloring various colors. Royal icing for decorating.
Instructions: In a bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Divide the dough into portions, one for each color of Lego brick you want to make. Add a few drops of food coloring to each portion and knead until the color is evenly distributed. Wrap each colored dough portion in plastic wrap and chill in the refrigerator for at least 30 minutes. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Take a small amount of each colored dough and roll them into small rectangles or squares to resemble Lego bricks. Place the Lego brick shapes onto the prepared baking sheet, leaving space between them. Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Once the cookies are completely cooled, use royal icing to decorate the Lego brick patterns and details. Allow the icing to set before enjoying your delicious Lego cookies!
