MEATLESS MONDAY!
Here’s a recipe you can try! Sweet potato enchilada bake!
I made this in a pan but it’s also yummy in the oven in little skillets or in the crockpot.
Ingredients:
1 sweet potato - cubed
A little bell pepper (I was saving some for another recipe)
1 can black beans
Seven grain rice
Spinach
Sauce = fajita sauce and some salsa verde
Basically just cook it all in a pan and put a little cheese to serve. So yummy.
BREAKFAST!
I had a hard time falling asleep last night. Because I knew the pressure was on because I wanted to get up early. I tried using a guided meditation app but I couldn’t find a good one.
My goal was to wake up by 6:45am this morning. Throughout the month I’m going to gradually get earlier. And i woke up at 6:30! Proud. So I had time to make breakfast.
This is my go-to fill-me-up breakfast. It’s an egg sandwich with whole grain thin bun, egg beaters, spinach, ham, and 1 slice of cheese. Oh and a big glass of water
About 282 cal, 9g fat, 25g protein
I’m so excited that I got this microwave egg cooker. It makes like so much easier. Once it’s done I pop it in the pan for a few seconds to make it look like food again.
Mini Grocery Haul!
Just had to pick up a few fresh things from the store to get me through the week.
Coffee cups
Vanilla Greek yogurt
Snap peas
Broccoli
Low fat cream cheese
2 bell peppers
Tricolored Bow tie pasta
Oats and dark chocolate granola (I’m hoping this will curb some late night sweetness cravings with some yogurt)
3 coconut bai waters (these are really yummy for low cal/low sugar drinks especially if you don’t like carbonation like I do and what some flavor other than water. They have lots of flavors but I personally add the coconut ones to my smoothies)
Romaine
Bananas
Frozen mixed berries
Oh and I stole a handful of cuties from my moms fridge this morning (not pictured 😂)
Friday!
Yay! We made it! How were you on your goals? I feel like I did pretty well? I went to the gym when I planned and stuck to my preplanned menu.
Here’s my “reward” : a small cut of steak with sweet potato tots and baked Brüssel sprouts. SO. YUMMY.

Finding motivation is so hard. But just remember even if you get five minutes in it’s better than nothing! Try the five minute rule. Workout for five minutes and ask yourself, can I do five more? YES. Keep doing this until you hit 30-45 min total. It will fly by. Break up your workouts. Don’t do the same thing it will seem to drag on forever. And remember. YOU. GOT. THIS.
Monday mantra! It’s a new day and a new start if you need it. We’re approaching week 3 of New Years resolutions. How have you been doing? Keep at it. You won’t regret it
Sober January
Anyone want to take this challenge with me? I’m not a huge drinker. I rarely find myself reaching for a beer when I get home. I think it’s because I dont like drinking anything flavored while I’m eating. That’s why I drink so much water. But every once and a while I’ll go out.
I’m trying to think back to my freshman year when I lost so much weight. Yes I was much stricter with my diet and exercise, but I also never had a sip of alcohol. Then as I started drinking more I didn’t lose the weight even with all of the effort I was putting in. I pretty much plateaued.
It could be a number of factors, but I want to cut alcohol out for at least a month. See if it helps, and if it does then cut it out as much as I can, allowing myself a glass or two on special occasions. And also looking for lower calorie options 😬 (I like vodka lacroixs)
Thoughts? Do you think it will change much? Should I focus my efforts elsewhere?
