Dukkah is an Egyptian spice blend that is wonderful. The more you eat it, the more addictive it becomes. Serve with toasted crusty bread Turkish bread is great for this and olive oil. Dip bread into olive oil, then the hazelnut mixture, and enjoy this unique and addictive mix.

This vibrant Persimmon + Pomegranate Salad with Burrata + Pistachio Dukkah is a delightful combination of sweet and savory flavors. Ripe persimmons and juicy pomegranate seeds are paired with creamy burrata cheese and a fragrant pistachio dukkah dressing. It's a refreshing and elegant salad that's perfect for special occasions or as a light and healthy meal.
Ingredients: 2 ripe persimmons, thinly sliced. 1 cup pomegranate seeds. 4-6 ounces burrata cheese. 1/2 cup shelled pistachios. 1/4 cup sesame seeds. 2 tablespoons coriander seeds. 2 tablespoons cumin seeds. 2 tablespoons fennel seeds. 2 tablespoons honey. 2 tablespoons olive oil. 2 tablespoons lemon juice. Salt and pepper to taste. Mixed greens for serving.
Instructions: In a dry skillet, toast the pistachios until fragrant and lightly browned. Remove from heat and let cool. In the same skillet, toast the sesame, coriander, cumin, and fennel seeds until they release their aromas. Be careful not to burn them. Remove from heat and let cool. Once cooled, grind the toasted spices and pistachios in a food processor until they resemble coarse breadcrumbs. Transfer to a bowl and stir in honey, olive oil, and lemon juice. Season with salt and pepper to taste. This is your pistachio dukkah. Arrange the mixed greens on a serving platter. Layer the sliced persimmons and burrata cheese over the greens. Sprinkle the pomegranate seeds over the salad. Drizzle the pistachio dukkah dressing over the top. Finish with a final drizzle of olive oil and a pinch of salt and pepper. Serve immediately and enjoy!
