Indulge in the decadence of this double-baked chocolate meringue brownie cake. It combines the rich fudginess of brownies with the light and airy sweetness of meringue for a delightful dessert that will satisfy your chocolate cravings.
Ingredients: 1 cup 2 sticks unsalted butter. 2 cups granulated sugar. 4 large eggs. 1 teaspoon vanilla extract. 3/4 cup all-purpose flour. 1/2 cup cocoa powder. 1/2 teaspoon salt. 1 cup semisweet chocolate chips. 4 large egg whites. 1 cup granulated sugar. 1/2 teaspoon cream of tartar. 1 teaspoon vanilla extract.
Instructions: Grease a 9x9-inch 23x23 cm baking pan and preheat your oven to 350F 175C. Melt the butter in a medium saucepan over low heat. Add 2 cups sugar and stir until fully incorporated. Take it off the heat and allow it to cool a little. One at a time, beat the eggs into the butter-sugar mixture, making sure to fully incorporate each one before adding the next. Add the vanilla extract and stir. Mix the flour, cocoa powder, and salt in a different bowl. Mixing until just combined, gradually add the dry ingredients to the wet ones. Add the chocolate chips and fold. Transfer the brownie mixture into the baking pan that has been preheated and level it out. A toothpick inserted into the center should come out with a few moist crumbs after baking for about 25 to 30 minutes. Melt the meringue while the brownie base is baking. Lightly beat the egg whites in a dry, clean mixing bowl until frothy. Beat in the cream of tartar after adding it. One tablespoon at a time, gradually add one cup of sugar until stiff, glossy peaks form. Add the vanilla extract and stir. As soon as the brownie base is done baking, take it out of the oven and quickly spread the meringue on top, sealing the brownie in place by making sure it reaches the pan's edges. Place the pan back in the oven and continue baking it for a further 15 to 20 minutes, or until the meringue turns golden brown. Take it out of the oven and allow it to cool fully before slicing it into square pieces. Have fun!
