Cherry pie in a jar. I usually make a sour cherry pie for my dad this time of year but he’s watching his sugar intake and a whole pie seemed difficult to deal with in a park, where we had our picnic. So I picked this recipe https://hoosierhomemade.com/cherry-crumb-pie-in-a-jar/ thinking I could alter it for sugar and jars would be convenient single servings. I actually found sour cherries and bought just 1/2 lb since they’re crazy expensive. I had already bought sweet cherries so I figured I’d do sour for my dad and sweet for everyone else. I found a low glycemic sugar substitute called Dolcedi, which is a liquid made just from concentrated apple juice. So instead of sugar, I used the dolcedi, slightly less that the recipe called for if sugar, in the sour cherry filling. And instead of flour, I used cornstarch. It worked extremely well—the taste was perfect. In the sweet cherry filling, I followed the recipe, using regular sugar and flour. Then for the crumble, for the sweet cherry pies I followed the recipe. The first pics are of that pie. Nice golden brown crumble. For the sour cherry, I used almond flour and I tried using the dolcedi again. This was less successful. Because it’s liquid instead of dry like sugar, the crumble was very wet. I added extra almond flour and got it to an ok consistency. It got very brown in the oven, as I understand nut flours do. I managed to get enough pieces that weren’t burnt to make dad’s jar. I think it turned out ok—thank goodness for the cherries being so tasty.
