Applebee's Chicken Quesadilla Grande tastes great, and now you can get it in a convenient wrap. These wraps are a quick and easy way to eat well.
Ingredients: 2 large flour tortillas. 1 cup cooked chicken breast, diced. 1 cup shredded cheddar cheese. 1/2 cup diced bell peppers assorted colors. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. 1/4 cup sour cream. 1/4 cup salsa. 1/4 cup guacamole. 1 tablespoon olive oil. 1 teaspoon chili powder. 1/2 teaspoon cumin. Salt and pepper to taste.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Cut up the chicken, bell peppers, and red onion and add them to the pan. Add salt, pepper, chili powder, and cumin to taste. It should take about 5 to 7 minutes of sauting until the chicken is hot and the vegetables are soft. Spread half of the shredded cheddar cheese out over one of the flour tortillas that you put in the pan. On top of the cheese layer, spread the cooked chicken and vegetable mix out evenly. On top of the chicken, sprinkle chopped cilantro. To make the second tortilla, put it on top and quickly press it down. The tortilla should be cooked for two to three minutes on each side until it turns golden brown and the cheese melts. Take the quesadilla out of the pan and let it cool down a bit before cutting it into wedges. Put guacamole, salsa, and sour cream on the side so you can dip them in them. To make it easier to handle and serve, wrap each quesadilla wedge in foil or parchment paper to make a single wrap.
