Indulge in the rich flavors of brown butter and seafood with this creamy risotto. The nutty aroma of brown butter perfectly complements the delicate taste of mixed seafood, creating a dish that's both comforting and luxurious.
Ingredients: 1 cup Arborio rice. 4 cups seafood or vegetable broth. 1/2 cup dry white wine. 1/2 cup grated Parmesan cheese. 1/4 cup unsalted butter. 1 small onion, finely chopped. 2 cloves garlic, minced. 1/2 pound mixed seafood such as shrimp, scallops, and/or mussels, cleaned and deveined. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Boil the broth in a saucepan over medium-low heat until it starts to bubble. Stay warm. For the other large pan, melt the butter over medium-low heat. For another three to five minutes, or until the butter turns golden brown and smells nutty, keep cooking. Watch out not to burn it. To the brown butter, add the minced garlic and chopped onion. Saut for about two to three minutes, until the onion is soft. Add the Arborio rice and stir it in. Cook for two more minutes, stirring all the time, until the rice is well covered with the brown butter mixture. Add the white wine and stir the rice around a lot while cooking until most of the wine is absorbed. Slowly add the warm broth to the rice while stirring all the time. Wait for each addition to be fully absorbed before adding more. Do this for another 18 to 20 minutes, or until the rice is smooth and fully cooked. Add salt and pepper to the seafood mix while the risotto is cooking. Put some olive oil in a different pan and heat it over medium-high heat. Add the mixed seafood and cook until it's almost clear. This should take about two to three minutes per side, depending on how thick the seafood is. Take it off the heat and set it aside. Add the grated Parmesan cheese to the risotto after it's done cooking and mix it in well. Mix the cooked seafood into the risotto slowly. Taste it and add more salt and pepper if you think it needs it. Add chopped fresh parsley on top of the hot brown butter seafood risotto to serve. Have fun!
