Small enough to eat in one bite, these mini quiches are great for brunch or as an appetizer at a party. They are full of tasty ingredients and will be a hit with your guests.
Ingredients: 6 large eggs. 1/2 cup milk. 1/2 cup shredded cheddar cheese. 1/4 cup diced ham. 1/4 cup diced bell peppers. 1/4 cup diced onions. Salt and pepper to taste. Cooking spray.
Instructions: Start by heating the oven to 350F 175C. Whisk the eggs and milk together in a bowl until they are well mixed. To the egg mixture, add the diced ham, bell peppers, onions, and cheddar cheese that has been shred. Add pepper and salt to taste. Thoroughly mix everything together. Spray cooking spray on a mini muffin tin to keep things from sticking. Carefully fill up every muffin cup about two thirds of the way to the top with the egg mixture. After the oven is hot, bake the quiches for 15 to 20 minutes, or until the tops are set and a little golden. After taking the mini quiches out of the oven, let them cool for a few minutes. Then, carefully pop them out of the muffin tin with a knife or fork. As a snack or starter, your mini quiches will taste great. Have fun!
