Potato Kugel is a traditional Jewish dish made with eggs, grated potatoes, and onions. It is baked until the outside is crispy and the inside is soft.
Ingredients: 6 potatoes, peeled and grated. 1 onion, grated. 3 eggs, beaten. 1/4 cup vegetable oil. 1/4 cup matzo meal. 1 teaspoon salt. 1/2 teaspoon black pepper.
Instructions: Preheat oven to 375F 190C. In a large bowl, combine grated potatoes, grated onion, beaten eggs, vegetable oil, matzo meal, salt, and black pepper. Mix well. Transfer the mixture to a greased 9x13 inch baking dish. Bake in the preheated oven for 1 hour or until the top is golden brown and crispy. Serve hot, sliced into squares.
