For YEARS I’ve wanted to try an authentic Chicago deep dish pizza. No one in London sells one (apart from a special here and there), and Japes comes close, but it’s not Chicago style. So I’ve always thought about making my own, but always had it in my head that it would be quite a task. Even though I’m a good cook, the thought of making the dough scared me. Then recently @jurassicfoodies made one and inspired me, so I did it myself. Full disclosure, this is the first attempt where I cut a lot of corners. I wanted to see how it came out as a finished product when using pre-made dough and pre-made pizza sauce. But I’m happy with the end result. I’ve got the mozzarella on the bottom, followed by another layer of dough, then the sauce, so it’s layered correctly. On my next attempt I’m going to make the dough myself, but from what I’ve read and seen online it shouldn’t be a traditional pizza dough. Actually, if you watch the Chicago episode of Somebody Feed Phil on Netflix (new series dropped last week), he visits what’s argued to be the best restaurant for deep dish pizza, and there’s no dough, it’s all cheese.
