I checked out this book from the library called Deceptively Delicious. It's brilliant! The concept is that you make a bunch of vegetable purees and then you sneak them into food. Simple, right? And so yum! I just happened to find an awesome steamer pot at a garage sale the day before I checked out the book, so I got a little assembly line with my steamer, colander, and food processor. I pre-measured the puree into 1/4 cup portions for easy thawing. It worked out great! Now we're all getting our veggies without the stress of cooking them in time and making them appealing; they're already in the entree!
