Blackbird hosted a super cool lunch to celebrate the publication of Project: Blackbird by Plate magazine. Written by a former extern from CIA, Chandra Ram, the article is a pretty amazing and accurate recording the history of Blackbird, with video and quotes and a lot of humility.

Poached turbot with turnips, pomelo, crispy chestnuts, and brown butter. Served with 2011 Chateau Haut Selve, Graves. The turnip was served with a beautiful curve of greens still attached.
Schmaltz-poached slagel farms pork loin with sunchoke, soured carrot butter, and wild rice. Served with 2011 Domaine Paul Blanke, Alsace Riesling. Pork poached in chicken fat. Definitely try that at home.
Grilled Iberico collar with celeriac risotto, granny smith apple, hazelnut, and black truffle. Served with 2008 Domaine Vincent Paris, Saint Joseph.
