Ingredients: 2 cups rolled oats. 1/2 cup unsweetened cocoa powder. 1 cup granulated sugar. 1/2 cup milk. 1/2 cup unsalted butter. 1 tsp vanilla extract. 1/2 cup shredded coconut optional. 1/2 cup chopped nuts e.g., almonds or pecans, if nut-free. 1/4 cup raisins or dried cranberries optional. A pinch of salt.
Instructions: Rolling oats, cocoa powder, chopped nuts, raisins or dried cranberries if using, and shredded coconut if using should all be combined in a big mixing bowl. Melt the butter in a saucepan over a medium heat. Add the milk, sugar, and a small pinch of salt and stir. Stirring continuously, bring the mixture to a boil and allow it to boil for one to two minutes. After taking the saucepan off of the burner, add the vanilla extract and stir. Over the dry ingredients in the mixing bowl, pour the hot sugar mixture. Mix everything until thoroughly mixed. Drop spoonfuls of the mixture onto wax paper or a baking sheet that has been lined using a spoon or cookie scoop. Using the back of a spoon, slightly flatten each cookie to the desired shape. Let the cookies cool and set for half an hour to an hour at room temperature, or until they become firm. The cookies are ready to eat once they have set.
