Ingredients: 6 slices bacon, diced. 1 onion, finely chopped. 3 cloves garlic, minced. 4 cups frozen corn kernels. 4 cups potatoes, peeled and diced. 4 cups chicken broth. 1 teaspoon dried thyme. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 2 cups whole milk. 1 cup shredded cheddar cheese. 2 tablespoons all-purpose flour. Fresh chives for garnish.
Instructions: In a skillet, cook diced bacon until crispy. Remove excess fat, leaving about 1 tablespoon in the skillet. Add chopped onions and minced garlic to the skillet. Saut until onions are translucent. Transfer bacon, onions, and garlic to the slow cooker. Add frozen corn, diced potatoes, chicken broth, dried thyme, smoked paprika, salt, and pepper to the slow cooker. Stir well. Cover and cook on low for 6-8 hours or until potatoes are tender. In a bowl, whisk together milk, shredded cheddar cheese, and flour until smooth. Pour the mixture into the slow cooker and stir. Cover and cook on low for an additional 30 minutes or until the soup is heated through and slightly thickened. Serve the corn chowder hot, garnished with fresh chives.
