Ingredients: 1 cup couscous. 2 cups vegetable broth. 1 bunch asparagus, trimmed and cut into 1-inch pieces. 8 ounces mushrooms, sliced. 1 small onion, finely chopped. 2 cloves garlic, minced. 2 tablespoons olive oil. 1/2 cup white wine optional. 1/2 cup grated Parmesan cheese. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: In a saucepan, heat the vegetable broth over low heat, keeping it warm but not boiling. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and saut until they become translucent. Add the mushrooms and asparagus to the skillet. Cook for about 5-7 minutes until they start to soften. Stir in the couscous and cook for an additional 2 minutes, stirring constantly to coat the couscous with the oil and vegetable mixture. If using, pour in the white wine and cook until it's mostly absorbed by the couscous. Begin adding the warm vegetable broth one ladleful at a time, stirring constantly and allowing the liquid to be absorbed before adding more. Continue this process until the couscous is tender and creamy, which should take about 10-15 minutes. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
