Gnocchi with courgette, mascarpone & spring onions
Gnocchi are delicious, thick, soft dough dumplings that can be made from semolina, ordinary wheat flour, egg, cheese, potato, breadcrumbs or cornmeal. According to a reliable Italian source of mine, they are quite straightforward to make from scratch but I admit I went with the shop-bought variety in this instance! Next time, I will post about my adventures in making gnocchi at home, I promise. :)
This is such a tasty, comforting dish I must say. The combination of flavours, including chill, creamy mascarpone, lemon zest, parmesan and courgette ribbons, makes it light and interesting enough for a summer feast. It’s equally ideal for a mid-week meal as the preparation work is fairly minimal. Did I also mention that gnocchi only takes 2 minutes to cook? :)
I served this dish simply with mixed leaves and a light dressing. I went with my old reliable: a lemon vinaigrette with a light dusting of mixed herbs - delish! :)
