Ingredients: 2 ears of fresh corn, kernels removed. 2 ripe mangoes, peeled, pitted, and diced. 1 red bell pepper, diced. 1/2 red onion, finely chopped. 1/4 cup fresh cilantro leaves, chopped. 1/4 cup fresh lime juice. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Put the fresh corn kernels, diced mangoes, red bell pepper, and finely chopped red onion in a large bowl. Whisk the olive oil and fresh lime juice together in a separate small bowl to make the dressing. Put the salad ingredients in a large bowl. Add the dressing.
