the culinary mystery that keeps me awake at night is that no one knows why the same type of pastry exists in both mexico and japan: conchas and melonpan
were they snuck there by a covert group of french bakers??? was it germans and their streusel?? did mexican and japanese bakers both arrive at the same conclusion that the only way to make imported wheat palatable to corn or rice consuming customers was to put it inside a cookie? there are theories that the pastry transferred from mexico to japan via hong kong or even the philippines, but no source has ever been pin-pointed
