These Double Coffee Donuts are a coffee lover's dream! With coffee in the batter and a coffee glaze, they are the perfect treat to enjoy with your morning brew.
Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup brown sugar. 2 tsp baking powder. 1/2 tsp salt. 1/4 cup unsalted butter, melted. 2 large eggs. 1 cup brewed coffee, cooled. 1/4 cup milk. 2 tsp vanilla extract. 1/4 cup strong brewed coffee, for glaze. 1 1/2 cups powdered sugar, for glaze. 1/2 tsp vanilla extract, for glaze. Coffee beans, for garnish.
Instructions: Preheat your oven to 350F 175C and grease a donut pan. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt. In another bowl, mix the melted butter, eggs, cooled brewed coffee, milk, and vanilla extract. Combine the wet and dry ingredients, stirring until just combined. Spoon the batter into the donut pan, filling each cavity about 2/3 full. Bake for 12-15 minutes or until a toothpick inserted into a donut comes out clean. While the donuts are baking, make the coffee glaze by mixing the strong brewed coffee, powdered sugar, and vanilla extract until smooth. Once the donuts have cooled slightly, dip each one into the coffee glaze, allowing excess glaze to drip off. Place the glazed donuts on a wire rack to set, and garnish with coffee beans.
