Ingredients: 1 cup pumpkin puree. 1/2 cup apple cider. 2 cups all-purpose flour. 1/2 cup granulated sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp allspice. 1 egg. 2 tbsp melted butter. 1 tsp vanilla extract. Oil for frying. Powdered sugar for dusting.
Instructions: In a bowl, mix pumpkin puree and apple cider until well combined. In another bowl, whisk together flour, sugar, baking powder, baking soda, salt, and spices. Add the egg, melted butter, and vanilla extract to the pumpkin mixture and mix well. Gradually add the dry ingredients to the wet ingredients and stir until a soft dough forms. Heat oil in a deep fryer or heavy-bottomed pot to 350F 175C. Drop spoonfuls of dough into the hot oil and fry until golden brown, turning them as needed, about 2-3 minutes per side. Remove doughnuts from the oil and drain on paper towels. Once slightly cooled, dust with powdered sugar. Serve warm and enjoy!
