These Healthy Chai Muffins are a delicious and nutritious treat, perfect for breakfast or as a snack. They are made with whole wheat flour, zucchini, pumpkin, and coconut, and infused with the warm and aromatic flavors of chai spices.
Ingredients: 1 1/2 cups whole wheat flour. 1/2 cup grated zucchini. 1/2 cup canned pumpkin puree. 1/2 cup shredded coconut. 1/2 cup honey. 1/4 cup plain Greek yogurt. 1/4 cup unsweetened almond milk. 1/4 cup coconut oil. 1 egg. 1 teaspoon chai spice mix. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Preheat your oven to 350F 175C. In a large mixing bowl, combine the whole wheat flour, chai spice mix, baking powder, baking soda, and salt. In another bowl, whisk together the honey, Greek yogurt, almond milk, coconut oil, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated zucchini, pumpkin puree, and shredded coconut. Line a muffin tin with paper liners or grease it lightly. Fill each muffin cup 2/3 full with the muffin batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into a muffin comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy your healthy chai muffins!
