Black and White Pizza - Mozzerella, Black Garlic, Roasted Tomato Sauce, Goat Cheese, Chives
Itâs not too often that I venture away from deep dish pizza when in Chicago. However, this weekend, I found myself hungry and only a few blocks from Coalfire, which Iâd been wanting to try. After my experience at the revelatory coal-fire pizzas at Pepeâs, Sallyâs, and Grimaldiâs, I could only imagine how good a pizzeria that names themselves after that style must be.Â
The menu was mostly 80% traditional / 20% unusual pizzas. I opted for the black and white to try to both evaluate the pizzeria with something that wouldnât potentially be muddled as well as getting something a little unusual. In the end, I found Coalfireâs performance on both fronts to be good but not stellar. The bake was to a crisp with little chewiness, the quality that I oh-so-loved from the aforementioned spots. Related to this was the a general lack of moisture throughout - the sauce was on the drier side and could not compensate for the dry crust. the mozzarella was a little thin, a further contributor to the dryness, and slightly bland. What it lacked was unfortunately not made up for by the other toppings which very much played a background roll and werenât easily detectable in most bites. That being said, where I could taste it, I though that the black garlic added a really nice quality and I think it would do well for most pizzerias to try to use it.Â
Overall, Coalfire was good but did not meet my expectations (especially for the nearly $20 pre-tax price that all of the pizzas run). I think that with a little less time in the oven and heavier application of all toppings (including cheese), this pizza could be taken to the next level, but for now, itâs relegated to the level of âjust goodâ.
