Ingredients: 6 large eggs. 2 ounces smoked salmon, finely chopped. 2 tablespoons mayonnaise. 1 tablespoon Dijon mustard. 1 tablespoon fresh lemon juice. 1 tablespoon chopped fresh dill. Salt and pepper to taste. Additional dill, for garnish optional.
Instructions: Place the eggs in a pot and cover with water. Bring to a boil over high heat. Once boiling, remove the pot from the heat, cover, and let the eggs sit in the hot water for 10-12 minutes. Meanwhile, prepare an ice bath by filling a bowl with ice and cold water. After 10-12 minutes, carefully transfer the eggs to the ice bath to cool completely. Once cooled, peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a bowl. Mash the egg yolks with a fork until smooth. Add the chopped smoked salmon, mayonnaise, Dijon mustard, lemon juice, chopped fresh dill, salt, and pepper. Mix until well combined. Spoon or pipe the filling into the hollowed-out egg whites. Garnish with additional dill, if desired. Serve immediately, or refrigerate until ready to serve. Enjoy these delicious smoked salmon deviled eggs as a keto-friendly appetizer or snack!
