Ingredients: 1 1/4 cups all-purpose flour. 1/4 cup unsweetened cocoa powder. 1/4 cup granulated sugar. 1/4 teaspoon salt. 1/2 cup unsalted butter, cold and cubed. 1 large egg yolk. 2 tablespoons cold water. 1 cup semi-sweet chocolate chips. 1/2 cup heavy cream. 1 tablespoon unsalted butter. 1 teaspoon vanilla extract. Optional: whipped cream, raspberries, or mint leaves for garnish.
Instructions: Preheat the oven to 350F 175C. In a food processor, combine flour, cocoa powder, sugar, and salt. Pulse until combined. Add cold cubed butter and pulse until mixture resembles coarse crumbs. In a small bowl, whisk together egg yolk and cold water. Add to the flour mixture and pulse until dough comes together. Divide the dough into 6 portions. Press each portion into tartlet pans, covering the bottom and sides. Prick the bottom of each tartlet with a fork. Bake tartlet crusts for 12-15 minutes or until set. Remove from oven and let cool completely. In a small saucepan, heat heavy cream until just simmering. Remove from heat and pour over chocolate chips. Let sit for 1 minute, then stir until smooth. Add 1 tablespoon of unsalted butter and vanilla extract to the chocolate mixture. Stir until butter is melted and mixture is well combined. Pour chocolate ganache into cooled tartlet shells. Refrigerate for at least 2 hours or until set. Before serving, garnish with whipped cream, raspberries, or mint leaves if desired.
