Ingredients: 10 oz dark chocolate, chopped. 1/2 cup heavy cream. 1/4 cup beer stout or porter. 1 cup crushed pretzels. 1/4 cup unsweetened cocoa powder. 1/4 cup powdered sugar. 1/4 tsp sea salt. 1/2 cup chocolate sprinkles optional.
Instructions: In a saucepan, heat the heavy cream and beer over low heat until it starts to simmer, but do not let it boil. Remove from heat and add the chopped dark chocolate to the cream mixture. Let it sit for a minute, then stir until the chocolate is fully melted and the mixture is smooth. Stir in the crushed pretzels and sea salt into the chocolate mixture. Transfer the mixture to a bowl and refrigerate for about 2 hours or until it becomes firm enough to handle. Once the mixture is firm, use a spoon to scoop out small portions and roll them into truffle-sized balls. Place them on a baking sheet lined with parchment paper. In a separate bowl, mix together the unsweetened cocoa powder and powdered sugar. Roll each truffle ball in the cocoa-sugar mixture until evenly coated. If desired, roll the coated truffles in chocolate sprinkles for extra decoration. Place the coated truffles back on the parchment paper and refrigerate for an additional 30 minutes to set.
