This Summer Chia Pudding is a refreshing and nutritious vegan breakfast or snack option. Loaded with omega-3 fatty acids, fiber, and antioxidants from chia seeds and fresh fruit, it's perfect for hot summer mornings or as a midday pick-me-up. The pudding is creamy, satisfying, and customizable with your favorite fruits.
Ingredients: 1/4 cup chia seeds. 1 cup unsweetened almond milk. 1 tablespoon maple syrup or agave nectar. 1/2 teaspoon vanilla extract. Fresh fruit of your choice for topping e.g., berries, mango, kiwi.
Instructions: In a bowl, combine chia seeds, almond milk, maple syrup or agave nectar, and vanilla extract. Whisk together until well combined and let it sit for 5 minutes. After 5 minutes, whisk the mixture again to prevent clumping. Cover the bowl and refrigerate overnight or for at least 4 hours until the pudding thickens. Once chilled and thickened, give the pudding a final stir. Divide the pudding into serving glasses or bowls. Top with fresh fruit of your choice. Serve chilled and enjoy!
