Cherry Cheese Cupcakes are a delightful treat with a creamy cheesecake filling, graham cracker crust, and a burst of sweet cherry flavor. They're perfect for any occasion and sure to satisfy your sweet tooth.
Ingredients: 1 1/2 cups graham cracker crumbs. 1/4 cup unsalted butter, melted. 1 cup cream cheese, softened. 1/2 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup cherry pie filling. 1/4 cup sour cream. Whipped cream and fresh cherries for garnish optional.
Instructions: Preheat your oven to 325F 160C and line a muffin tin with cupcake liners. In a bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated with butter. Press about a tablespoon of the graham cracker mixture into the bottom of each cupcake liner. Use the back of a spoon to press it down firmly to form the crust. In another bowl, beat the cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Pour the cream cheese mixture over the graham cracker crust in each cupcake liner, filling them about 2/3 full. Spoon a teaspoon of cherry pie filling onto the center of each cupcake. Bake in the preheated oven for about 20-25 minutes, or until the cupcakes are set and slightly golden around the edges. Remove from the oven and let them cool in the muffin tin for about 10 minutes. Then, transfer them to a wire rack to cool completely. Once cooled, refrigerate the cupcakes for at least 2 hours, or until they are well-chilled.
