Back in 1804 we were the first black nation to take our independence. That's right...THE FIRST! On that day, the newly liberated Haitians united and made Soup Joumou. Joumou is a squash that the slaves were not allowed to eat. It was only consumed by the slave masters and exported. The recipe differs a bit, depending on what region of Haiti you are from. "Joumou, beef, potato, malanga root, celery, leeks, cabbage, carrots, parsnips ect". Over 200 hundred years later, Haitians all over the world still make this soup on January first to honor our independence and because it is damn good!
