I don't know if you are all aware of the beauty that is the sweet potato french fry. Fries are good. Some fries are great. Sweet potato fries however are a fricking godsend. So when I'm sitting there eating this remarkable grilled cheese and then ALSO have a pile of s.p. fries, I'm already going to enjoy them- AND I ALWAYS DO. Dip them in the special ranch sauce available upon request? Perfection. 

I think it's also the atmosphere that makes this place a cheesie heaven. It's indeed a pub, as they do serve alcohol and have a functioning bar. But the walls are half chalkboard as well, so foodies can draw on the wall as they wait. It's a warm and welcoming place that's also open until 3 am, so if you're just feelin the need for cheese in the dark hours of the night just head there immediately. They also serve nearly a dozen different kinds of grilled cheese- a caprese, frenchie, mexican, etc.- anyway you want it, you can have it. Located in Evanston, Chicago (on Belmont), and surely more to come. 

Wouldn't shock me if this place sticks around for decades. Grilled cheese and alcohol never goes out of style.
