Enjoy the flavor of cedar-smoked lemon-rosemary chicken that is smoky and full of citrus. The chicken is juicy and tender, and the cedar plank gives it a unique smell. This is a great dish for barbecues.
Ingredients: 1 whole chicken, about 4-5 lbs. 2 lemons, sliced. 4 sprigs of fresh rosemary. Salt and black pepper to taste. 1/4 cup olive oil. 4 cloves garlic, minced. 1 cedar plank, soaked in water for 1-2 hours.
Instructions: Warm up the grill to about 375F 190C, which is medium-high heat. Clean the chicken with water and dry it with paper towels. Salt and pepper the inside of the bird. Put lemon slices and rosemary sprigs inside the hole. Add minced garlic, salt, and pepper to a small bowl and mix them together to make a marinade. Cover all sides of the chicken with the marinade by rubbing it in. Lay the chicken on top of the wet cedar plank on the grill. Put the lid back on the grill and cook for about an hour and a half to two hours, or until the internal temperature reaches 165F 74C. Check on the chicken every so often and baste it with any extra marinade. After cooking, take the chicken off the grill, cover it with foil, and let it rest for 10 minutes. Then you can cut it into pieces.
