CEBADINA
A traditional drink from Leon, Guanajuato, but also popular here in Uruapan. It’s barley-based, with a fruit flavouring (ours was tamarind), mixed with sodium carbonate. This last ingredient makes it fizzle and creates a carbonated drink. As she mixed the two together, I was flooded with memories of experiments in science class many decades ago. The taste was not bad; it reminded me of Coke. This is usually drank cold. Locals claim it’s good for everything - as a diuretic, digestive, anti-inflammatory, etc. I just enjoyed it as a cold, carbonated drink.
