Ingredients: 2 lbs pork shoulder, cut into chunks. 1 onion, chopped. 4 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon oregano. 1 teaspoon smoked paprika. 1 teaspoon chili powder. Salt and pepper to taste. 1 orange, juiced. 1 lime, juiced. 1/4 cup fresh cilantro, chopped. Corn tortillas. Mango Salsa:. 1 ripe mango, diced. 1/2 red onion, finely chopped. 1 jalapeo, seeded and diced. 1/4 cup fresh cilantro, chopped. 1 lime, juiced. Salt to taste.
Instructions: Preheat your oven to 325F 163C. In a large oven-safe pot, combine pork chunks, chopped onion, minced garlic, cumin, oregano, smoked paprika, chili powder, salt, and pepper. Pour the freshly squeezed orange and lime juice over the pork mixture. Add chopped cilantro. Cover the pot and transfer it to the preheated oven. Cook for 3 hours or until the pork is fork-tender and easily shreds. While the pork is cooking, prepare the Mango Salsa. In a bowl, combine diced mango, finely chopped red onion, diced jalapeo, chopped cilantro, lime juice, and salt. Mix well and refrigerate until ready to serve.
