Ingredients: 1 cup almond flour. 1 cup powdered sugar. 2 large egg whites. 1/4 cup granulated sugar. Green food coloring optional. Cactus-shaped macaron template printable.
Instructions: Prepare the cactus-shaped macaron template by printing it out and placing it under a silicone baking mat or parchment paper on a baking sheet. Sift together the almond flour and powdered sugar into a bowl. Set aside. In a separate mixing bowl, beat the egg whites until they become foamy. Gradually add the granulated sugar while continuing to beat the egg whites. Beat until you achieve stiff, glossy peaks. If desired, add a few drops of green food coloring to achieve the desired cactus color. Carefully fold the almond flour and powdered sugar mixture into the egg white mixture. This is your macaron batter. Be gentle to maintain the airiness of the batter. Transfer the macaron batter to a piping bag fitted with a round tip about 1/2-inch in diameter. Pipe cactus shapes onto the prepared template on the baking sheet. Leave some space between each cactus shape. Tap the baking sheet on the counter to remove any air bubbles from the macarons. Let the piped macarons sit at room temperature for about 30 minutes to develop a skin. They should no longer be sticky to the touch. Preheat your oven to 300F 150C. Bake the macarons in the preheated oven for 15-18 minutes, or until they lift easily off the parchment paper or silicone mat. Remove the macarons from the oven and allow them to cool completely on the baking sheet. Once cooled, carefully remove the macarons from the baking sheet. To assemble the cactus macarons, pair up macaron shells of similar sizes and shapes. Pipe a small amount of your favorite Pacifica frosting between two matching macaron shells and gently press them together.
