Ingredients: 4 bone-in pork chops. Salt and pepper to taste. 2 tablespoons olive oil. 1 onion, thinly sliced. 1 small head of cabbage, thinly sliced. 2 apples, cored and sliced. 1/2 cup chicken broth. 2 tablespoons Dijon mustard. 1 tablespoon apple cider vinegar. 1 teaspoon caraway seeds optional. Chopped fresh parsley for garnish.
Instructions: On both sides, season the pork chops with salt and pepper. Warm up the olive oil in a big pan over medium-high heat. It will take about 34 minutes on each side to turn the pork chops golden brown after you add them. Take the chops out of the pan and set them aside. Add the sliced onions to the same pan and cook for about two to three minutes, until they get soft. Put the apples and sliced cabbage in the pan. Stir the vegetables and cook for another two to three minutes, until they start to wilt a bit. Put the apple cider vinegar, Dijon mustard, chicken broth, and caraway seeds if using in the pan. Mix things together well. Adding the pork chops back to the pan with the cabbage and apples after they have been seared. Cover the pan and cook on medium-low heat for 15 to 20 minutes, or until the cabbage is soft and the pork chops are cooked all the way through. Before serving, sprinkle with chopped fresh parsley.
