Ingredients: 1 cup chopped dates. 1/2 cup hot water. 1/2 cup unsalted butter. 1 cup brown sugar. 2 large eggs. 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 tsp vanilla extract. 1/2 cup buttermilk. For Butterscotch Sauce:. 1/2 cup unsalted butter. 1 cup brown sugar. 1/2 cup heavy cream. Pinch of salt. 1 tsp vanilla extract. Whipped cream and chopped dates for garnish.
Instructions: In a small bowl, combine the chopped dates and hot water. Let them sit for 10 minutes to soften. In a saucepan, melt 1/2 cup of unsalted butter over low heat. Stir in 1 cup of brown sugar until it dissolves and the mixture is smooth. Remove from heat and let it cool slightly. In a mixing bowl, beat the eggs and then add the date mixture and the cooled butterscotch sauce. Mix well. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the vanilla extract and buttermilk until the batter is smooth. Preheat your waffle iron and grease it with cooking spray or butter. Pour the waffle batter onto the preheated waffle iron and cook according to the manufacturer's instructions until the waffles are golden brown and crisp. While the waffles are cooking, prepare the butterscotch sauce. In a saucepan, melt 1/2 cup of unsalted butter over low heat. Stir in 1 cup of brown sugar and cook until it dissolves and bubbles. Slowly add 1/2 cup of heavy cream while stirring constantly. Cook for a few more minutes until the sauce thickens slightly. Remove from heat, add a pinch of salt and 1 tsp of vanilla extract.
