If you're in a hurry for breakfast or brunch, this Avocado and Egg Sandwich is a tasty and healthy choice. The avocado is smooth and goes well with the runny egg yolks. The super seed bread gives it a healthy crunch. Put your favorite toppings on it and eat it!
Ingredients: 2 slices of super seed bread. 1 ripe avocado, mashed. 2 large eggs. Salt and pepper to taste. 1 tablespoon olive oil. 1/4 cup baby spinach leaves. 2 slices of tomato. 2 slices of red onion. 2 slices of Swiss cheese optional.
Instructions: Toast the pieces of super seed bread until they turn a beautiful golden color. Warm up the olive oil in a small nonstick skillet over medium-low heat. Put the eggs in the pan and cook them until the whites are set and the yolks are still runny, or until they're done the way you like them. Add pepper and salt. Put the same amount of mashed avocado on one side of each toasted bread slice. Put the fried eggs on top of the bread slices that have avocado on them. Put baby spinach leaves, tomato slices, red onion slices, and Swiss cheese on top of the eggs, if you chose to use it. Add the last few slices of super seed bread on top to make a sandwich. Cut the sandwich in half diagonally and serve right away.
