Ingredients: 1 cup quinoa, cooked. 1 ripe avocado, mashed. 2 cups all-purpose flour. 1 tablespoon baking powder. 1/2 teaspoon salt. 1/2 cup unsalted butter, cold and cubed. 1 cup sharp cheddar cheese, grated. 1/4 cup fresh chives, chopped. 1/2 cup buttermilk.
Instructions: Set the oven to 425F 220C and heat it up. Put the flour, baking powder, and salt in a large bowl and mix them together. Mix the cold butter cubes into the flour. You can use your fingers or a pastry cutter to cut the butter into the flour until it looks like big crumbs. The cooked quinoa, mashed avocado, grated cheddar cheese, and chopped chives should all be added at this point. Add the buttermilk and mix slowly until everything is just mixed. Do not mix too much. Spread the dough out on a floured surface and shape it into a round that is 1 inch thick. Slice the dough into rounds and put the rounds on a baking sheet lined with parchment paper. Scones are done when they are golden brown and cooked all the way through after 12 to 15 minutes in the oven. Let the scones cool down a bit before you serve them. This avocado quinoa scone is tasty by itself or with your favorite spreads.
