A refreshing and colorful salad that combines the crunch of broccoli, the sweetness of grapes, and the freshness of cucumber. Topped with a tangy balsamic dressing, this salad is perfect for a light and healthy meal.
Ingredients: 2 cups broccoli florets. 1 cup red grapes, halved. 1 cucumber, sliced. 1/4 cup red onion, finely chopped. 1/4 cup chopped walnuts. 1/4 cup crumbled feta cheese. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Blanch the broccoli florets in boiling water for 2 minutes, then immediately transfer them to an ice bath to cool. Drain and set aside. In a large bowl, combine the blanched broccoli, halved red grapes, sliced cucumber, finely chopped red onion, chopped walnuts, and crumbled feta cheese. In a small bowl, whisk together the olive oil and balsamic vinegar to make the dressing. Season with salt and pepper to taste. Drizzle the dressing over the salad ingredients and toss to combine. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld. Serve chilled and enjoy!
