Like I said I’m a Vanilla Light Iced Coffee, which is pretty true.  I spend all summer drinking that stuff, and on occasion I even cook with it.  Though I’m pretty sure If I sign up in the Fall I would be French Vanilla all the way.    Truth be told, we pretend to be French when we drink our coffee with a dash of French Vanilla, my household is pretty weird. I have yet to put on beret, but that might happen in the near future.

This past weekend I got a little taste of spring.  Once it finally stop raining the sun came out and it was gorgeous.  I immediately started thinking about summer treats and drinks.  One of my favorite drinks for summer is iced mocha.  While it’s my favorite drink, it’s a drink that has a ton of calories and usually involved me hoping in the car and heading to a local coffee shop.  Since it can run you anywhere from 3 to 5 dollars it’s a pretty expensive habit to keep.  When I heard about International Delights Light Iced Coffee with ⅓ the calories I thought I would give it a try. I’m happy I did, because for price of a Small Mocha I ended up with a ½  gallon delicious ⅓ the calories drink. 

For those of you who are already big fans of the regular International Delight Iced Coffee and are afraid to switch.  Don’t be, we did a little blind taste test, and no one could tell the difference. For those of you hooked on the Original and Caramel Macchiato there isn’t a light version yet, this is strictly Vanilla and Mocha. The priced varied a little store by store, with Target selling it for the lowest price of $3.49.  You can use this handy little link to find what stores in your area carry it.

What makes this little delicious iced treat so amazing, is how easy it is to cook with.  Crystal of Crystal & Co. made ice cream, Lisa of Flour Me With Love turned her drink into a Mocha Cheesecake Parfaits, and James of The Rocker Father made an amazing Peanut Butter & Chocolate on the Rocks.  I turned mine into Happy Truffles. Now, they are really just milk chocolate mocha truffles, but I feel my use of jimmies really took it up a notch.  

Happy Truffles

Total Time: 8 hr 45 min | Inactive Prep: 8 hr 0 min | Prep: 15 min | Cook: 30 min | Makes: 30 Truffles

12 ounces milk chocolate chips

1/2 cup International Delight Iced Coffee in Mocha

1 tbsp. butter

colorful jimmies for rolling. 

Combine chocolate, Iced Coffee and butter in a saucepan over low heat until melted and smooth.  

Pour into a shallow bowl and refrigerate overnight.  

To prepare, scoop out teaspoonful and roll between palms to form balls.  

Roll into jimmies.  

Refrigerate until set, about 15 minutes.  

Enjoy!

Store in refrigerator.
