Ingredients: 1 can white beans, drained and rinsed. 1 can black beans, drained and rinsed. 1 cup cherry tomatoes, halved. 1/2 cup fresh basil leaves, chopped. 3 cloves garlic, minced. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Mix black beans, white beans, cherry tomatoes, basil, and minced garlic together in a big bowl. Mix the olive oil, balsamic vinegar, salt, and pepper in a small bowl. Drizzle the bean mixture with the dressing, then gently toss to coat. To allow the flavors to meld, let the salad marinate in the fridge for at least half an hour. Enjoy and serve cold!
