Berrymisu
Berrymisu is another version of Tiramisu.  However, it is made with berry instead of coffee and coffee liqueur like Tiramisu.  I like Berrymisu as it's fruity, tasty and a crowd pleaser.  Berrymisu is also a great dessert for Christmas as you can see in the photo here. Â
Berrymisu
Ingredients:
500g packet of frozen raspberry, thawed
1 teaspoon corn starch/corn flour
180g Nestle white chocolate, chopped
¼ cup (50g) cocoa powder
1 cup hot boiling water
3 egg yolks
30g caster sugar or icing sugar
250g mascarpone or cream cheese
300ml thickened/heavy cream
30 ladyfingers/sponge fingers/ savoiardi
A large round or square bowl/pan
Method:
Place thawed raspberries onto a plate, reserve the raspberry liquid.  Pour into a small sauce pan, add corn starch, mix well, bring just to a boil. Pour into a bowl.
Place white chocolate in microwave-safe bowl then microwave on medium-high for 1 minute. Stir then microwave for further 30 seconds each until melted.
Combine cocoa powder and hot water in a large mixing bowl.
Combine the egg yolks and sugar in a heat proof bowl, set over a pan of simmering water (do not let the bottom of the bowl touch the water). Beat constantly with a hand held mixer for about 7-8 minutes. Remove from heat, place the bowl in a basin of cold water or place in the fridge to cool.
Beat thickened/heavy cream to soft peaks form, add mascarpone/cream cheese, white chocolate, cooled egg mixture and beat until incorporated.Â
Quickly dip half of the sponge fingers, one at a time, in coffee mixture, arrange over the base of the tray, trimming to fit, if necessary. Spread half the cheese mixture over sponge layer. Arrange half of raspberries on top. Repeat with remaining sponge fingers, cheese mixture and raspberries. Drizzle with the raspberry liquid. Cover with plastic wrap, place in the fridge for at least 6 hours or preferably overnight then serve.
