We were surprised the 66 Cheval Blanc was the wine of the trip to Bern’s! We had expected the iconic 61 Ausone (swipe left) to be the better wine, but the Cheval Blanc was incredibly fresh and vibrant. The Cheval Blanc was a true testament to the ability of magnums to age more slowly than regular bottles. These incredible Right Bank wines were served for the third flight of our dinner the second night. Everyone loves Pichon Lalande! So we were thrilled when the somm brought out the second flight for Saturday night’s dinner - 1948 and 1950 Pichon Lalande! These well-preserved septuagenarians were not just a novelty - they were both still in their drinking window, albeit well past peak. Despite being close in age, the wines could not be more different. The 48 had faint plum aromas, tobacco, earth and later developed the tell-tale green note. In contrast, the 50 had bright fruit, but little complexity. Initially the 50’s palate was very iron heavy, but after an hour it rallied and the fruit overpowered the iron. The 48 never showed much fruit, but was incredibly complex and the better wine.
